Mountain Jack Salad Recipe – Hearty Enough for a Complete Meal!
Tonight, we’re having a meal my husband frequently asks for. We call it “Mountain Jack’s Salad”. His mother passed it on to us. I am told it is so named because it is similar to a salad that was served by a restaurant chain that used to be around here called Mountain Jack’s. It is very good! It’s often filling enough if you’re only hungry enough for a light meal but adding some bread or soup would be delicious as well.
This is one of those recipes that doesn’t have exact measurements, except for the dressing.
You’ll need:

For the salad:Baby Spinach (I just get a bag or container of the pre-washed baby spinach leaves)
Diced, peeled apples (we always use Granny Smith and I usually use 2 or 3; I also toss these with a tad bit of lemon juice to keep them from getting brown)
Diced green onions (1 bunch should do it)
Craisins (6oz bag)
Walnuts (I buy the 3oz bag)
Crumbled bacon (I take the lazy route and buy the “real bacon pieces” in a bag)
For the dressing:
1 cup olive oil
5 tbsp red wine vinegar
4 tbsp sour cream
½ tsp dry mustard
2 tbsp sugar
2 tsp dried parsley
2 garlic cloves, crushed (I use the lazy route here most times too – I used the diced refrigerated garlic)
The dressing does separate after it sits for awhile – just give it a good shake or stir to mix things back up!

1. Combine all the ingredients for your dressing in a bowl or large measuring cup. Whisk.
2. Toss together all the ingredients for the salad in a large bowl.
3. Serve together (I let everyone add their own amounts to their bowl to keep leftovers from getting soggy)
4. Eat & enjoy!
Easy, delicious and (for the most part) healthy!
