So, a few weeks ago, my husband sends me a text with a photo of cookies saying something like, “These look delicious.  And, only 3 ingredients! {Hint, Hint}”  Hmmm… wonder what he was trying to tell me :)

When I finally got around to going shopping for the “3 ingredients”, we couldn’t find that particular recipe again but the ones we did find all seemed to use the same things: cake mix, Cool Whip and egg… and none of them used just 3 ingredients.   Of course, I won’t bake cookies using egg after learning of my daughter’s egg allergy so I set off to experiment.  What I came up with was a 5-ingredient recipe that I like to call “Triple Threat Lemon Cookies” because I used three sources for the lemon-y goodness!  Husband whole-heartedly approves (as do the children!)  :)

Triple Threat Eggless Lemon Cookies

  • 1 box Lemon flavored cake mix
  • 2 tbsp Lemon flavored yogurt (I used Yoplait Original)
  • 1 tub Cool Whip, thawed
  • 1 tsp Lemon Extract
  • Powdered Sugar for coating

Mix first 4 ingredients until well blended.  The dough will be thick and sticky!  It looks more like frosting than cake mix… err, cookie dough :)

Using a tablespoon for consistency, scoop out the sticky, gooey, lemony mess using another spoon or your finger to loosen it from your spoon on to a surface generously covered with powdered sugar.  Sprinkle powdered sugar on top of the sticky mound and work it until it is a beautiful little powdered ball.

Place each powder covered ball on to parchment lined baking sheet and bake at 350 degrees Fahrenheit for about 12 minutes.  Or, until the tops have crackled and the batter looks dry.

Remove from oven to a cooling rack until cool enough to handle.  Enjoy!
